The Best Simple Peach Cobbler

The classic peach cobbler, one of my personal favorites. Is there anything better than a warm, sweet peach cobbler on a summer night? I definitely don’t think so… 🙂

Not much needs to be said about this recipe… it’s borderline perfection. Now, I can’t take credit for this recipe, all of it goes to my wonderful Aunt Jen. I’ll try to do it justice :).

How to Make Peach Cobbler:

I always start off by making the topping. I find that the peaches go fast, so it’s best to make the topping first. Or even better you have someone else cutting up peaches while your making the topping.
Mix Bisquick, sugar, butter and milk. I use a fork to really incorporate all the ingredients. Should look like this ↓

Then, cut up the peaches and preheat the oven to 400° F. You want your peaches to be fairly ripe. I used 6-7 peaches, but the nice thing about this recipe… you can’t really have too many peaches. Another nice thing about this recipe, is that you can switch out the peaches with another fruit, like blackberries, depending on the time of year, and what produce is available to you. 

Next, combine water, sugar, cornstarch, and your peaches to a saucepan over medium heat. Bring to a boil, stirring every once in a while, and cook for 2 minutes. It should look like this ↓

Next, your gonna want to pour it into a dish, a 13×9 works fine, the dish that I used was 11×8.

After you pour your peaches in the dish, put your topping on. I grab a fistful at a time and, between my fingers, I mold it into a flat, pancake almost, and place it on the peaches. You keep doing that until you run out of topping or all the peaches are covered. It should end up looking like this ↓

I like to sprinkle on some sugar, just gives it that extra boost.

Finally, put that baby in the oven and cook until golden, about 25 to 30 minutes.

Peach Cobbler

Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 2 tbs. cornstarch
  • 3/4 cup sugar
  • 1 tsp. cinnamon
  • 1 cup water
  • 1 1/2-2 1/2 cup peaches (really depends on dish size & size of peaches)
  • 1/2 tsp vanilla

Topping

  • 2 cup Bisquick
  • 4 tsp. sugar
  • 4 tbs. melted butter
  • 1/2 cup milk

Instructions

  1. Preheat oven to 400°F
  2. Mix Bisquick, sugar, butter and milk in bowl, should be doughy.
  3. Combine water, sugar, cornstarch, cinnamon and peaches in saucepan over medium heat, bring to boil. Cook for 2 minutes.
  4. Pour peaches into a 11x8 or 13x9 dish.
  5. Cover peaches with topping, by working fistfuls of the dough into flat, pancake like, pieces, until all the peaches are covered. Sprinkle a but of sugar on top.
  6. Bake until golden, about 25 to 30 minutes. And enjoy!

Notes

Can use different fruit than peaches, like blackberries, etc, depending on what's in season.
