Almond Joy Cookies-egg free and gluten free!

These coconut chocolate cookies have quickly become a house favorite. They have been termed ‘the almond joy cookies’ and are requested by family and friends often! My very best friend is gluten free and egg free so it has always been a struggle to make a yummy dessert for her. My love language is baking for others so it’s been such a bummer not being able to make anything for her! I stumbled upon this recipe and knew it was a keeper. She loves them so much and I love making them for her!

How to Make These Almond Joy Cookies:

This recipe is seriously easy, takes a tops of 30 minutes. Start by mixing together sweetened shredded coconut, unsweetened shredded coconut, sliced almonds, baking powder and sweetened condensed milk. 

After you mix all that up and add your chocolate chips, it should look like this…

The hardest part of this recipe is putting the cookies on parchment paper or silicon mats. I use a big-ish spoon to scoop it onto my hand and roll it into a ball in my hand. Then smush it onto the mat. After you do this it should look like this…

Cook them for 13-16 minutes at 325° or until the edges are a crispy brown. Then, let them cool on the mat for at least 5 minutes before transferring to wire rack.

Ingredients

  • 2 cups unsweetened shredded coconut
  • 1 cup sweetened shredded coconut
  • 1 cup sliced almonds
  • 1 tsp. baking powder
  • 14oz sweetened condensed milk
  • 1 ½ cups chocolate chips

Instructions

  1. First, preheat oven to 325°F. Then, mix your shredded coconut, almonds, baking powder and sweetened condensed milk together in medium sized bowl.
  2. Add chocolate chips.
  3. On a baking sheet lined with parchment paper or a silicon mat, use a spoon to scoop out some dough and use hands to flatten onto sheet.
  4. Bake for 13-16 minutes or until it's edges look golden brown.
  5. Let them cool completely before transferring to wire rack. Enjoy!
