Focaccia Bread- crunchy outside, fluffy middle- yum!

This Focaccia bread, while not the easiest of recipes, is absolutely delicious. It’s a fun way to connect to my Italian roots and is never boring to make. You can add on to this recipe easily by adding cheese or yummy herbs to the dough!

How To Make My Focaccia Bread:

You are going to want to start with a large mixing bowl with 2 3/4 cup lukewarm water. From there add the tablespoon of active or instant dry yeast and mix. After that, add 2 cups all-purpose flour and 3 cups bread flour, along with the teaspoon of kosher salt. Mix roughly using a fork. The dough should be very sticky. Then, add some olive oil to your hands and dive in there. I like to use my hands to make sure there are no flour spots. From here, add olive oil on to a clean surface and lightly knead the dough, don’t go overboard. Shape the dough into a ball and place it stitch side down in a large oiled bowl (I use the same one that I mixed it in).

Proofing:

Cover the dough with plastic wrap and place in the fridge overnight or for up to 2 days. Before and after pic ↓

Remove the dough from the bowl and place in an oiled dish, I used a 9×13. Then flatten the dough into the dish and cover with more plastic wrap or a pan of some sort and let proof in a warm spot for 1 1/2-2 1/2 hours. It should double in size. After proof ↓

Preheat oven to 450° F. Put some more olive oil on you hands and the dough, then use your fingers to dimple the bread. I like to sprinkle it with salt, but some rosemary or thyme would be yummy sprinkled over it. Cook for 30-50 min, mostly depending on the pan size, and take out when it’s golden brown. Let it cool for a bit before cutting into it! I like to serve with olive oil and balsamic!

Ingredients

  • 1 teas. kosher salt
  • Olive oil

  1. Add water and yeast to a large bowl and mix.
  2. Add both flours and salt to the bowl and mix roughly with a fork.
  3. Put olive oil on your hands and use your hands to mix the dough, making sure that no flour spots remain. The dough should be sticky.
  4. Spread olive oil onto a clean surface and put the dough on it and knead lightly and shape into ball shape.
  5. Put dough stitch side down in an oiled bowl (I use the same one I used to mix it)
  6. Cover the dough with plastic wrap and put in the fridge overnight or for up to 2 days.
  7. Take dough out of the fridge and spread out onto a well-oiled dish, I used a 9x13.
  8. Cover the dish and let proof in a warm spot for 1 ½-2 ½ hours.
  9. reheat oven to 450 F and put olive oil on your hands and some on the dough, dimple using your fingers.
  10. Cook for 30-50 min depending on the thickness of your dish. Cook until golden brown.
  11. Let it cool when it's done and cut however you want!
