Lemon Blueberry Donuts- with tart lemon icing!

These Lemon Blueberry Donuts are a delicious treat with the perfect balance between sweet and tart. A fairly simple recipe with the only kind of outlandish thing being a donut tray!

I am seriously obsessed with the combination of lemon and blueberry…. like it’s a problem. My lemon blueberry muffins are some of the most requested baked goods in my house. So I thought to myself, a donut version would probably be just a good, and not to toot my own horn, but I was right ;))

How to Make Lemon Blueberry Donuts:

To start this recipe off, add the vegetable oil, sugar, eggs, vanilla, milk, lemon juice and lemon zest to a large bowl and mix. In my lemon blueberry muffin recipe I use Lemon Jello mix to make the muffins very moist, the same could be done in this recipe but I wanted to make it using only natural ingredients, but a substitute is completely possible. 

In a separate bowl, add your dry ingredients. These include flour, baking powder, baking soda and salt.

Add your dry to the wet ingredients and mix well to combine. Then add the blueberries! 

Using greased donut trays, I use this set from Amazon, fill the donut divots with batter to the very top of the tray. 

Put them in the oven for 7-8 minutes at 425° F. Let them cool completely before dipping in the glaze.

The glaze is very simple, just powdered sugar, milk, and lemon zest.

And then voilà! You have made a delicious treat that I’m sure will not last in your kitchen very long. Expect more donut recipes in the future… I can’t wait to use my newly bought tins more!

These Lemon Blueberry Donuts are a delicious treat with the perfect balance between sweet and tart.

Ingredients

For the batter

  • ½ cup vegetable oil
  • 1 cup sugar
  • 1 ½ tsp. vanilla extract
  • 2 eggs
  • Juice of 1 lemon (about ¼ cup)
  • Zest of 1 lemon (about 1 tsp.)
  • 2 ⅔ cup flour
  • 1 ½ tsp. baking powder
  • ¼ tsp. baking soda
  • ½ tsp. salt
  • 1 ½ cup blueberries

For the glaze

  • 2 cups powdered sugar
  • ⅓ cup milk
  • Zest of 1 lemon (about 1 tsp.)

Instructions

  1. Set oven temp. to 425°F
  2. Mix oil, sugar, vanilla, eggs, lemon juice and zest together in a large mixing bowl.
  3. In a separate bowl add the flour, baking powder, baking soda, and salt and mix.
  4. Add the dry ingredients to the wet and mix thouroughly.
  5. Add the blueberries to the batter.
  6. Grease the donut pans and fill to the top with batter, they will not overflow, only complete the donut look.
  7. Let them bake for 7-8 minutes and check them using a toothpick (if it comes out with little to no crumble it's cooked).
  8. Let them cool on a wire rack while you make the glaze. Just mix the powdered sugar, milk and lemon zest together in a bowl.
  9. Dip the donut by holding on side and dipping the other in the bowl.
  10. Enjoy!
