This recipe is by far one of my most requested by my fam. My sister especially is always asking me to make this zucchini bread. It’s a simple recipe! Perfect to make on a lazy weekend… and it should last you through the week for a yummy breakfast! (Although that never happens at my house… it’s almost always gone the next day😆). I meant to post this recipe wayyy earlier, but life got in the way… like it often does :))
How To Make This Yummy Zucchini Bread:
First thing I always do is shred my zucchini. This recipe calls for 2 cups and normally that’s 1 big zucchini or 1 1/2 small ones.
Then, in a separate bowl beat the eggs, oil, and sugar together. After it’s combined, add the zucchini (which you can squeeze the water out of if you want). I put the zucchini in a tea cloth or a thin towel of some kind and then twist it till the liquid drains out. Doing this makes the bread less dense, but I know some people like their bread denser, so doing this is optional. Then, add vanilla and mix lightly but well.
In another bowl, add flour, salt, baking soda, cinnamon, ginger, and baking powder. Combine the dry mixture to the wet and then add chocolate chips (I used semi-sweet). This is what the batter should look like after combined ↓
You can use 2 normal loaf pans (this recipe makes 2 loafs, bake at 350° F for about 1 hour) or you could put this batter in muffin tins (bake for around 15-20 min), doughnut tins (bake for about 12 min), or these cute vintage pyrex refrigerator dishes that I used! And don’t forget to grease your pans!
When they were filled about halfway, the big dish cooked for 41 min and the small one cooked for 33 min. And I like to sprinkle some sugar on top, I think it gives them a cool look when they finish baking.

Moist and cinnamon-y zucchini bread! Perfect to make on a lazy weekend... and it should last you through the week for a yummy breakfast!
Ingredients
- 3 eggs
- 1 cup oil
- 2 ½ cup sugar
- 2 cups grated zucchini
- 3 tabls. vanilla
- 3 cups flour
- 1 teas. salt
- 1 teas. baking soda
- 3 teas. cinnamon
- ½ teas. ginger
- ¼ teas. baking powder
- 2 cups chocolate chips
Instructions
- Beat the eggs, add oil, sugar and zucchini (with squeezed out water or not).
- Add vanilla and mix lightly but well
- Put flour, salt, baking soda, cinnamon, ginger and baking powder in a separate bowl.
- Add dry mixture to wet mixture and mix till blended, then add chocolate chips and combine.
- Put in greased standard loaf pans, or in muffin tins, or doughnut, whatever floats your boat. The time for cooking the standard loaf pan is about 1 hour at 350°F. The cook time for the other tins are listed above.
